I love gin. It is as simple as that. Ask me what  I would like to drink when I watch the sunset in the bush or when  I am sitting on a beach in Cape Town, or even at home after a long day at work and I will ask for a refreshing gin.

I suppose that is why when you ask me for the perfect gin & tonic I can actually provide you with a recipe. Making it will without a doubt give you as much pleasure as taking the first sip.

Preparation is key. You need to make sure you have all the ingredients to make the experience as stress free as possible.Start with a proper gin class. I prefer a Copa gin glass or a balloon glass, but really what is important is to get your favorite glass.

Then take a lime or lemon and start rolling it on a chopping board with the palm of your hand to let the juices flow. I recommend doing it at least 10 times. Now you are ready to cut your lime or lemon. Do not cut it from head to tail but rather straight through the middle. Now put the flat side on your chopping board and cut it four wedges.

Take a wedge and give it a slight squeeze in your glass and then drop in the wedge. Seal the wedges you have not used in a plastic bag or better freeze them for lemon ice cubes.

Now take your homemade gin and pour at least 50ml into your glass. Add a splash for luck and next add some good quality cubed ice straight from the freezer in your glass to cool your gin without diluting it too much. I top it up all the way and give it a good stir with a long spoon. Open a bottle of tonic water, I prefer FeverTree tonic but really any tonic will do. Pour 100ml over the ice. Give another stir, let the bubbles settle and add another lemon wedge at the top. Do not squeeze it this time!!

Finally sit back and enjoy your home made gin, you will have lots of fond memories and stories to tell about making your own awesome gin. And then of course enjoying every sip
